Howdy! Call me KC. I’m mama to the sweetest toddler, the kindest big sis & wife to a handsome man. I’m a lifestyle blogger, DIY afficiando, sunshine lover, amateur baker and more! I believe in espresso before anything and praying over everything.

You know that feeling, usually around three o’cl You know that feeling, usually around three o’clock, when you realize that you have No. Idea. What. Is. For. Dinner. And also, that you haven’t been grocery shopping in days and you’re snowed in. So…time to get creative 🙃. 

Solution: pantry pasta!! Tonight’s version included chickpeas for protein, diced tomatoes, and artichoke hearts (4 yo’s fave!). We didn’t have “regular” pasta noodles sooo brown rice ramen noodles made a stand-in, and let me tell you. More nutrients and YUM. Semolina, you weren’t missed at this party. 

For next level flavors, add a bit of balsamic vinegar reduction when you serve and *chefs kiss*! Weeknight dinner done in less than 20 minutes AND the girls liked it 🙌🏼

A dear friend reminded me of this Scripture a few A dear friend reminded me of this Scripture a few weeks ago. It was one I used to cling to a lifetime ago, and it was truly the Spirit working within her to bring me these familiar words. Jeremiah had it rough. He was not a very positive prophet + shared the hard-to-hear messages of repentance, destruction and consequences. His book is definitely not uplifting. But, he also shared words of comfort.

Whatever your day was like, sending you a hug + these words to feel comfort + hope, too 💌.

Let me tell you. Today was cold. All my Texans and Let me tell you. Today was cold. All my Texans and southerners out there with snow // I SEE YOU! It’s COLD! ❄️

But here’s the thing. When we’re inside, we’re missing outside. And today outside, we saw bunny tracks! And E tracked the bunny to its home under a tree! It was magical! She’s learning tracking, the native animals, their winter patterns. We also saw vole tunnels! (What’s a vole? Good question..ha. Little 🐭)

Generally, it’s a no thank you for me. But, when you’re looking for interactive, educational, INDOOR, activities for the winter months…why not try a butterfly garden? 

We went with a friend and there’s strength in numbers! The girls actually really liked seeing the little winged flying creatures, and I hid my distaste to the best of my ability for all the other creepy-crawlies that were about. It was pretty cool to see them in their natural, lush, tropical habitat. Plus, the indoor playground was ah-mazing. 

So, moral of the story - grab a friend, step on out of that comfort zone, and see what magic happens! ✨ Maybe it’s magic, or maybe it’s just a fun morning out with lots of snacks + giggles 😊.
